Caramel apples with a 2-ingredient dairy-free caramel 🍏 this is the easiest fall treat ever!

The caramel is just @edwardandsons Let’s Do Organic Heavy Coconut Cream + coconut sugar, simmered until thick, glossy, and perfect for dipping. Roll in chopped nuts and you’ve got a cozy treat that’s dairy-free, gluten-free, and so shareable ✨

Pro tip: rinse your apples in vinegar and dip in boiling water first! It removes the waxy coating so the caramel actually sticks 🙌

INGREDIENTS
-13.5 oz can @edwardandons Let’s Do Organic® Organic Heavy Coconut Cream
-1/2 cup (70g) coconut sugar
-Optional: 1/2 tsp salt + 1 tsp vanilla extract
-6-8 granny smith apples
-Chopped nuts for rolling (I like peanuts, walnuts, or hazelnuts)

INSTRUCTIONS
Combine the coconut cream and coconut sugar in a medium saucepan. Bring to a boil over medium-high heat, whisking constantly. Once boiling, reduce the heat to low and simmer for about 30 minutes whisking occasionally. It should be darker, thick, glossy, and easily coat the back of a spoon.

Transfer to a heat-proof bowl, and cool to room temperature before coating your apples. If the caramel separates at all, a quick whisk will bring it back to a smooth glossy consistency.

Dip each apple in the cooled caramel and then a roll in chopped nuts (or chocolate chips, sprinkles, etc.) Refrigerate until the caramel is set, then enjoy!

No yeast, no rising, no rolling out dough… just soft pumpkin spice dough rolled in cinnamon sugar and baked in @edwardandsons Native Forest Simple Coconut Milk for the gooiest caramel-y bottoms, and drizzled with a sweet vanilla glaze🤍🎃😋 Vegan + gluten-free + ready in about 30 minutes!

PUMPKIN DOUGH
-1 1/4 cup (175g) gluten-free flour
-1 tsp baking powder
-1/4 tsp salt
-1 tsp pumpkin pie spice
-1/3 cup (80g) pumpkin puree
-1 flax egg (1 tbsp flax + 2 tbsp warm water)
-1/3 cup (75ml) @edwardandsons Native Forest Organic Simple Coconut Milk
-1 tbsp melted dairy-free butter (or coconut oil)
-1 tsp vanilla extract

PUMPKIN SPICE SUGAR COATING
-2 tbsp melted dairy-free butter (or coconut oil)
-1/4 cup cane sugar
-1 tbsp pumpkin pie spice
-Optional: 1/4 cup @edwardandsons Native Forest Organic Simple Coconut Milk

VANILLA GLAZE
-1/2 cup powdered sugar
-1-2 tbsp @edwardandsons Native Forest Organic Simple Coconut Milk
-1/2 tsp vanilla extract

INSTRUCTIONS
Preheat the oven to 375°F, and grease a mini casserole dish (6.5 x 5-inch) or 8x4-inch loaf pan.

Whisk together the dry ingredients, add the wet ingredients, and mix to form a soft smooth dough. Divide into 12 portions, and roll each into a smooth ball.

Mix together the cane sugar and pumpkin pie spice for the coating. Roll each ball in the melted butter, then in the sugar mixture, then place in the prepared pan. Pour the optional coconut milk over top of the dough balls if desired for extra richness.

Bake for 18-22 minutes. In the meantime, whisk together the glaze ingredients until smooth. Remove from the oven, cool 5 minutes or so before drizzling the glaze, and serve warm.

It’s the perfect no-bake summer cake! Full recipe below🔥🍫

INGREDIENTS
-12oz semi-sweet chocolate chips
-1 cup (240ml) @edwardandsons Let’s Do Organic Heavy Coconut Cream
-9oz tub whipped dairy-free topping
-7oz jar vegan marshmallow fluff
-36 gluten-free graham crackers

INSTRUCTIONS
Combine the chocolate chips and heavy coconut cream. Microwave for 60 seconds, then stir until smooth and fully melted.

Fold together the whipped dairy-free topping and marshmallow fluff until smooth (you can whisk a little bit if needed to remove lumps).

Refrigerate both for 30-60 to thicken.

In an 8x8” pan lined with a parchment sling, layer: marshmallow fluff (thin layer), graham crackers, marshmallow fluff, graham crackers, chocolate ganache, graham crackers, marshmallow fluff, graham crackers, chocolate ganache, graham crackers, marshmallow fluff. Make sure you end with fluff and make sure your fluff layers are pretty thick (½ inch or so). You will have to break some graham crackers to make them fit.

Top with shaved chocolate and crushed graham crackers. Refrigerate overnight.
Slice and serve. Keep leftovers covered in the refrigerator for up to a week.

Ice cream cake but make it a loaf🍰 Layers of dairy-free ice cream + crushed sugar cone crust in a simple loaf pan = the easiest summer dessert that looks SO impressive when you slice into it🤩

I used @edwardandsons Let’s Do Organic Sugar Cones and scoops of chocolate, vanilla, blueberry, and salted caramel ice cream—a very good combo🍫🍨🫐 But this recipe is endlessly customizable!

INGREDIENTS
-4 tablespoons coconut oil, melted
-12 @edwardandsons Let’s Do Organic® Organic Sugar Cones
-1/8 teaspoon salt
-4 pints dairy-free ice cream (I used chocolate, vanilla, blueberry, and salted caramel)
-Sprinkles, chopped nuts, whipped cream, chocolate sauce (2 tbsp maple syrup whisked with 1 tbsp cocoa powder), etc for topping

INSTRUCTIONS
Grind the cones in a food processor to coarse crumbs. Add the melted coconut oil and salt. Process again to a wet sand consistency. Line a loaf pan with a parchment paper sling. Spread half of the cone crumbs into the bottom of the pan, pressing in firmly. Freeze for 30 minutes.

Top with a layer of ice cream scoops, pressing in gently. Cover with the remaining cone crumbs in an even layer, pressing in gently. Top with another layer of ice cream scoops. Place a piece of wax paper on top and press in firmly. Freeze at least 4 hours.

Slice and serve with toppings of choice.
